Barbecue Chicken Pizza

My favorite pizza place in the Bay Area, has the best bbq chicken pizza! When I moved to Seattle a few years agoChicken and bbq sauce are always a delicious combination and in this recipe they are topped with mozzarella cheese, red onion and cilantro for a well-balanced and tasty pizza. For the chicken, you can bake the chicken breast in the oven with just salt, pepper, and olive oil. Alternatively, you can use store-bought cooked chicken breasts or rotisserie chicken. All the other ingredients can also be prepared ahead of time. The sliced red onions becomes slightly sweet when baked, which compliment the bbq sauce and the freshness from the cilantro helps elevate all the other flavors. 

If you make pizza at home often, I highly recommend investing in a pizza stone. The porous stone allows the moisture to be absorbed from your dough. It helps the crust cook more evenly and prevents it from getting soggy on the bottom. If you don’t own a pizza stone, you can still use a baking sheet to make delicious pizzas at home.

The baking time for the pizza may vary depending on the thickness of your pizza dough. I recommend the dough to be rolled out to 1/4-1/3 inch thick to ensure it’s fully cooked before any of the toppings burn. The pizza is ready when all the cheese is melted and bubbly. It can be served with a sprinkle of parmesan and red pepper flakes.

Delicious and simple pizza that’s the perfect blend of Italian and southern flavors. 

Ingredients

  • 1 12-14″ pizza dough rolled out (1/4-1/3 inch thick)

  • 2 cups shredded mozzarella

  • 1/3 cup bbq sauce (Kansas City style or something similar)

  • 1/4 cup sliced red onion

  • 3/4 cup cooked chicken breast cut into 1/2 inch cubes

  • 1/4 cup chopped cilantro

  • 1 tbsp olive oil

Directions

  • Preheat the oven to 500ºF. If using a pizza stone, place it in the oven before it’s turned on.
  • Pour 1/4 cup of bbq on top of the dough and spread it evenly leaving a ~1/2 inch border. 
  • Spread 1.5 cups of the shredded mozzarella on top of the bbq sauce.
  • Place the cubed chicken on top of the cheese followed with onions and cilantro.
  • Sprinkle the remaining mozzarella on top.
  • Drizzle the rest of the bbq on top of the cheese.

  • Bake for 18-20 minutes until the cheese is all melted and bubbly and edges of the dough are light golden brown.
  • Serve with grated parmesan and red pepper flakes.
