Fruit parfait is a healthy breakfast that can be prepared in a matter of minutes. It can be prepared quickly during the busy weekday mornings or elegantly in wine glasses or decorative bowls for a Sunday brunch party. I used plain greek yogurt for this recipe and added a touch of vanilla to it, but you can use flavored yogurt if you prefer.

The fruit in this dish is very versatile. You can use any combination of berries, bananas, or stone fruits. You want to use sweeter fruits that would compliment the yogurt well (no oranges or pineapple for example). To make the parfait even healthier, I choose to sprinkle some flax seeds on top both for presentation and extra fiber. The parfait should be prepared right before serving since the granola will soften over time.

Ingredients
1 cup greek yogurt
1 cup granola
1/2 tsp vanilla extract
1½- 2 cups of fresh berries
2 tsp flax seeds
Directions
- Mix the yogurt and the vanilla. This step can be done ahead of time.
- Place about 1/4 cup of yogurt in each bowl/cup.
- Place 1/4 cup of granola on top.
- Top with 1/3-1/2 cup of berries.
- Repeat each layer one more time.
- Sprinkle with flax seeds and enjoy!
