Watermelon Salad

With only a few ingredients and quick and easy preparation, this refreshing appetizer is the ideal dish for summer parties. A cold slice of watermelon is the perfect way to cool off on a hot day and in this salad, I combine it with mint and feta to create a delicious salad. Make sure to buy the watermelon a day or two in advance so it can be chilled in the fridge. When available, I use a combination of red and yellow watermelon; both taste the same, but the yellow color adds a different color dimension to the dish.

The chopped mint adds a freshness to the salad which has a cooling effect on the tongue while the feta cheese adds a salty bite to the dish. Lastly, the vinaigrette dressing helps tie in all the different flavors and the acidity from the red wine vinegar balances the sweetness from the watermelon.

If you’re making this for a party, I recommend preparing all the ingredients and keeping them in separate containers until ready to serve. If you mix the ingredients too early, the mint will discolor after a while, and the salt from the feta will draw out the water from the watermelon. It will still taste delicious, but it will not look as beautiful.

Simple, refreshing salad perfect for hot summer days! 

Ingredients

  • 1 small Watermelon, chilled (~10-12 cups cubed)

  • 2/3 cups fresh mint chopped

  • 1 cup crumbled feta

  • 4 tbsp red wine vinegar

  • 3 tbsp olive oil

Directions

  • Cut the watermelon into 3/4-1 inch cubes and place in a large bowl. Keep refrigerated until ready to serve.
  • In a small bowl whisk together the olive oil and the red wine vinegar.
  • When ready to serve, remove watermelon from the fridge and mix in about 2/3 of the chopped mint and feta, being careful not to crush the watermelon. 
  • Pour the dressing over the salad, top with the remaining feta cheese and mint. 

Notes

  • Keep ingredients in separate containers until ready to serve to avoid discoloration of the mint.
