Bacon Wrapped Figs

With just a few ingredients, bacon wrapped figs are not only delicious appetizers, but they also look elegant and impressive. The umami and salty bacon pairs well with the figs. A slight drizzle of honey helps elevate the sweetness from the figs, which compliments the salty and tangy blue cheese.

These fig bites are best if baked on a cookie rack that’s placed over a sheet pan. This technique allows the bacon fat to drip into the baking sheet, which makes the bacon more crispy once it’s baked. If they are cooked directly on a baking sheet, the bacon fat pools around the fig bites, causing the bacon to be soggy at the end.

Part of the preparation for this appetizer can be done ahead of time; you can wrap the figs in bacon and keep them refrigerated until ready to bake. The figs should be stuffed with the cheese after they are baked and right before serving to ensure the cheese does not melt away. These figs are best served fresh and warm with a slight drizzle of honey.
